Recipe for Romance: Oysters Rockefeller

Oysters Rockefeller is a favorite recipe. My husband and I tried it first at a local restaurant that had a wonderful upscale seafood buffet on weekends. We were newly married and always looked forward to Friday nights when we’d eat our fill of the best seafood anywhere. Sadly, the restaurant has been gone for many years.

Oysters Rockefeller is not available in our area, so if we want it, we have to make it ourselves. My husband shucks the oysters while I prepare the spinach mixture. He says it’s quite a chore and he’d hate to try it without the proper knife and Teflon gloves, so make sure you have the right gear. He says the proper knife makes them easier to open and the gloves are for your own safety.

When I make Oysters Rockefeller-style, I tweak the recipe a little. I make three times the spinach and cut the bread crumb topping in half. I leave the juice from the oysters in the shell because it adds flavor. I don’t have oven-proof oyster plates, so I use a large baking pan covered in foil (some people place their oysters on the top of muffin tins.)

Oysters Rockefeller

4 tablespoons unsalted butter

2 garlic cloves, minced

2 shallots, chopped

2 cups chopped fresh spinach

1/4 cup white wine

Salt and pepper to taste

Dash red pepper sauce

2 tablespoons olive oil

5 oz.  grated Parmesan cheese

1 tablespoon chopped parsley

2 dozen oysters on the half shell

Rock salt (if you use this in the pan to hold the half-shells in place)

Lemon wedges for garnish

Directions:

Melt butter in skillet. Sauté garlic for 2 minutes to infuse the butter. Place bread crumbs in a mixing bowl and add half the garlic butter. Set aside. To the remaining garlic butter in the skillet add shallots and spinach. Cook for about three minutes until spinach wilts. Add white wine. Season with salt and pepper to taste. Add a dash of red pepper sauce. Allow your mixture to cook down for a few minutes. Add Parmesan cheese to mixture to taste.

Finish preparing the bread crumb topping by mixing in olive oil, 1/4 cup of Parmesan cheese and parsley. Season with salt and pepper.

Spoon 1 heaping teaspoon of the spinach mixture onto each oyster followed by a spoonful of the bread crumb mixture. Sprinkle with Parmesan cheese.

Sprinkle a baking pan liberally with rock salt and arrange oysters in the salt to steady them. Bake in a preheated oven at 450 degrees F for 10 to 15 minutes until golden.
